Bringing Wheelchairs Into The 21st Century

Having recently taken part in research to create accessible footpaths out of recycled chip bark and the testing of their level of usability for wheelchair users I came to one very important conclusion. Let me firstly explain the research conditions:

Trials involved attempting to push (or be pushed) in a wheelchair through 100mm depth of varying thickness woodchip. Well, if like myself you are a wheelchair user you will already know what the result was! Yes, the front wheels simply sunk or dug in. Any forward motion was in fact impossible (with or without assistance)

In an ideal world wood chip or bark would be the best possible surface in woodland pathways, cheap to produce, convenient to acquire and very soft to fall or walk on also hardwearing, environmentally friendly and of course cheep! But unfortunately not wheelchair friendly. So what is the answer?

To find the answer we need to go back in-time (No, not Dr Who style) we need to look at the wheelchair as it was designed.

In 1932. Engineer, Harry Jennings, built the first folding, tubular steel wheelchair. (The design as we know it today) That was the earliest wheelchair similar to what is in use today. That chair was built for a paraplegic friend of Jennings called Herbert Everest. Together they founded Everest & Jennings, a company that monopolized the wheelchair market for many years. An antitrust suit was actually brought against Everest & Jennings by the Department of Justice, who charged the company with rigging wheelchair prices. The case was finally settled out of court.

Anyway, that?s your history lesson for today but what this tells us is that design has not really changed that much for nearly 80 years! Yes, there are lighter versions but the basic style remains. Two big wheels at that back, two little wheels at the front.

Again going back in time we need to remember that in the 30?s wheelchair users were mainly institutionalized and having access to the outside world (let alone woodland areas and any public areas) was not expected or even considered necessary, let alone a legal right as it is today.

So the answer to the problem of gaining wheelchair access in not only woodland pathways but beaches, grass, gravel etc etc is very simply, redesign the wheelchair so that it meets the needs of today?s users, not those of 70+ years ago!

Cat Furniture Buyers Guide

Cat furniture is a commodity that is known by many names. The most common include Cat Trees, Cat Condos, Kitty Condos, Cat Towers, Cat Climbers, Cat Scratchers and Cat Gyms. There are dozens more, but whatever term you use to describe cat furniture, the purpose is the same - to enable your cats to follow their instinctual desire to scratch without damaging your furniture, carpet, or other belongings, and also to give them a place of their own where they can exercise, play, and lounge.

There are many different types of cat furniture, made from such a variety of materials, that shopping for cat furniture can be confusing. Which materials are better? What design is the most stable? What size should I buy? Which style would my cat like? In this article, I'll try to help you answer these questions so you can make a more informed buying decision.

Why Do Cats Scratch?

In order to be completely informed when buying cat furniture, it's helpful to understand why it is that cats scratch in the first place. The primary reason for cats scratching furniture, carpets, woodwork, or other objects is to mark their territory for other cats (this is instinctual, so they will do this even if they are the only cat in the house). Additionally, the scratching helps remove the dead cells from the claw sheaths, and stretches their muscles and ligaments.

Feline behavior is consistent, whether it's a tiger in the wild, or a Maine Coon in a condominium. Scratching is the way they say to other felines in the area "Hey, I'm here, and this is my place". Scratching communicates this in two ways. The first is obvious - the scratches provide a very visual cue to other cats. Additionally, cats have scent glands in their paws, which leave pheromones that other cats can smell. For those of you that have experience with declawed cats (PLEASE don't declaw your cats!), that's the reason that they continue to scratch even after the claws have been removed.

Cat Furniture Coverings

In the past, most cat furniture was covered with carpet. This was a good choice, because it looks good, and it offers a material that cats obviously like to scratch. Some of the cat furniture manufactured today, especially hand-made models, still use carpet.

Most carpeting today contains fabric loops. Unfortunately, after thousands of scratches, cat claws can cut through these loops, resulting in unsightly and messy shredding. You've probably seen this yourself.

However, with today's technology, engineers have developed an acrylic material specifically for use in the cat furniture industry. This material, commonly referred to as fake or faux fur, has become increasingly popular. The main reason for this popularity is the fact that it does not contain loops, so it doesn't shred like carpet does, and therefore tends to last longer than carpet. The drawback is that since it doesn't offer the resistance that carpet does when they scratch it, cats don't like it for scratching as much as they like carpeting.

As a result, most cat furniture that offers faux fur also utilizes sisal rope as a covering. Generally, the vertical posts are wrapped with sisal rope, and the platforms and enclosures are covered with the acrylic fur.

Sisal rope is made from the Agave Sisalana plant, which is native to the Yucatan area of Mexico. Cats seem naturally drawn to this material, and unlike the acrylic fur, sisal rope offers the resistance that cats need to tune their claws and stretch their muscles.

Some cat furniture manufacturers that use carpet as a covering also offer sisal-wrapped posts, and in most (but not all) cases cats will scratch on the sisal instead of the carpet.

Structural Materials

Obviously the strength of the cat furniture is provided by the underlying structural materials. Vertical posts are usually wood 2 x 4's or heavy cardboard tubes, while horizontal surfaces are either plywood or pressboard. Manufacturers sometimes use cardboard for enclosure walls that do not bear any weight load.

It is a common misconception that wooden posts offer more structural integrity than cardboard tubes. In actuality, this is not necessarily true. Of course everybody knows that wood is stronger than cardboard when flat. However, when thick (at least 1/4") cardboard is made into a tube, and stood up vertically, it can hold an incredible amount of weight. The addition of a layer of sisal rope wrapped around it adds even more strength. One big advantage of cardboard posts over wooden ones is the weight. Shipping rates are based on weight, and shipping costs for a piece of cat furniture made with cardboard posts will be considerably less than a comparable model with wooden posts.

For platforms and weight-bearing walls in enclosures, manufacturers generally utilize either plywood or pressboard (also known as particle board). Pressboard is fiber pulp that is mixed with a chemical adhesive to create a smooth, uniform board. Plywood is manufactured by gluing thin layers of wood together, resulting in a board that is actually stronger than solid wood of the same thickness.

Generally, plywood is preferred to pressboard for cat furniture platforms for a number of reasons. During shipping, pressboard is much more likely to be damaged than plywood, especially if the carton is dropped on it's corner. Additionally, pressboard tends to crumble around the edges of screw or bolt holes if the hardware is tightened too much. Pressboard platforms are also more likely to break if enough weight or vertical force is put on it, as happens if a child sits on it.

Floor-to-Ceiling or Freestanding?

Cat furniture models will be either freestanding or floor-to-ceiling (commonly referred to as cat trees). Freestanding cat furniture is usually wide and bottom-heavy, to prevent it from tipping over when cats are at the top, or are very active. Floor-to-ceiling models use tension against the ceiling to provide their stability, and so do not require as wide a footprint as freestanding models. A properly assembled and installed floor-to-ceiling model cannot tip over. Usually, the tension against the ceiling is accomplished either through use of a spring-tension rod or a screw-based mechanism. This doesn't mean that the cat tree is screwed into the ceiling. Rather, the topmost post has a threaded bolt, usually topped with a soft protective cap that screws up against the ceiling. Generally, the screw-type cat trees are more stable, especially if you have active cats, and are also less likely to damage the ceiling surface.

So What Should You Buy?

The decision as to what type of furniture to buy for Tabby and Fritz should be determined by a combination of factors:

- Do you want a freestanding or floor-to-ceiling model? This is really more of a personal choice issue than anything else. If you have very active or very large cats, a floor to ceiling model will probably offer more stability. If you have a multi-cat household, special attention should be paid to the weight rating of the furniture. It's also usually possible to secure a free-standing model to a wall with common brackets and hardware available at any home center, in cases where rambunctious kitties cause it to rock or tip.

- Which covering? Carpet offers the advantage of more color choices, and if you're very particular about your cat condo fitting in with your d?cor, this might be your best choice. Faux fur models are generally made in neutral colors like beige or taupe, although there are some exceptions. In either case, having a sisal scratching surface should be a goal if at all possible.

- Structural materials. If you have a choice, choose plywood over pressboard. As for the posts, both cardboard and wood offer good stability. As stated earlier, models with wooden posts are heavier and may cost more to ship.

Starting My Own Restaurant

When I was nearly hitting the age of 30 something inside me changed I noticed I was starting to question my worth and why am I doing this job. As a manager for a big pub chain I had enough of dealing with complaint after complaint and serving rubbish products. That is when I thought long and hard about what I wanted to do with my future.

I then came up with the idea that I wanted to run my own restaurant. This restaurant had to be started from scratch as I wanted to build it from nothing to a busy restaurant and have no wise cracks from people saying "they did not used to do it that way" or "so and so used to do it this way".

I then made a list of things that I believe make a successful restaurant, these were:

LocationBusiness Partners involvedSkills of employeesSize of premisesI knew the location had to be in a busy area which would have a good influx of summer trade but still busy during the winters quiet months. I needed a business partner who had good experience in business and could help coach me along the way and also a business partner who was a skilled chef who could provide consistency in the product.

The skills involved would be important as I had always been a restaurant manager and was looking for a replacement so I could concentrate on the back end of the business with marketing and coming up with the ideas and putting them in place to grow the business.

Believe it or not working in many pubs and restaurants I learnt from the accounts that running the property (fixed costs) were never that much different so I had to make sure the property was big enough to cash in during the summer months.

Rabbet joints: The rabbet is a reinforced butt joint, with one or both joining members notched to fit together. It is usually reinforced with screws or nails. Rabbet joints are easy to make and very strong. They are used chiefly for shelving and at the corners of cabinet pieces.

Drawer construction is generally a good indication of overall furniture quality. Doweled and dovetailed drawer joints indicate a high degree of craftsmanship. Building a Restaurant Point of Sales Software Application

Five years ago I began searching for an easy way to track my customers, my accounts receivable, and all the other aspects of my business. I wanted to be able to share this information and access it from anywhere on a wide variety of systems. The end result was the HotPotato Restaurant Point of Sale.

My search ended with me designing and developing my own modular Point of Sale. I spent a great deal of time considering the coding technology I would use. In the end I was swayed to develop my application in visual basic with an HTML front end. Using HTML to design the user interface gave me a very simple way to use the application on a wide variety of platforms. The server may need to be Windows based system, but client machines can be any platform. Pocket PC development became a snap and Linux becomes a viable operating system for any client machines.

At first I thought this development angle might pose problems. But after using the system I can say nothing but positives about it. A web server based application defeats all the problems associated with client installation, multi-location support and ability to access from anywhere.

HotPotato can be installed either locally or on a web server, this gives it the advantage of being on a closed network or accessed off-site. Multi-location support and reporting abilities were some of the features I added first.

Over the last five years I've seen HotPotato go through a wonderful evolution that has produced it's most current version. It is easy to install and so simple to deploy that I?m embarrassed to brag about it. Truths when I say the features developed into the application are cutting edge and developed with the latest software methodologies. A great amount of time went into considering the platform for its development. There was a lot of worry that the business community wasn?t ready for a distributed web server based application. However current trends from larger software companies confirm this is not only a viable option but also how future software applications will be developed.

Being able to easily deploy, support and update thousands of systems with one install and being able to back, manage and analyze their data is the kind of power people once dreamed of. Those powers and abilities are now here in viable applications.

Restaurants are one business that can truly take advantage of using hand held PCs for order placement. The cost savings and profit increase are too obvious to ignore. Developing a system that was easy to install, deploy and maintain I looked to lead of large companies and have been more than satisfied with the results. A true multi-platform application that speeds the order process and refines the work flow to allow for better staffing, a better customer experience and a high profit.

Managing inventory was simplified by associating menu items with one or multiple inventory items supplied by specific vendors. This creates a recipe for the menu item and an accurate accounting of the inventory. By setting minimum stock number and restocking levels a restaurant can maximize their revenue by creating accurate orders that reflect the sales patterns the software reveals.

Customer management tools, delivery management, waiting lists and a wide range of catering features were all developed to round off the software. Centralizing the most common tasks and providing information on time management and sales records gives the restaurant the ability to make strategic decisions regarding their business. No piece of software is perfect and they all require good user feedback to refine them. Developing several Point of Sale Software applications has taught me just how special each business is and just how much power their software can give them.

Mexican Restaurant Recipes: More Than Beans and Tortillas Now

Have you noticed that Mexican restaurants are branching out in their menu offerings? I have.

I remember a newspaper cartoon from years ago in which the main character ruminates, somewhat forlornly, on the fact that Mexican restaurants had dozens and dozens of dishes, but they were all just variations on beans and tortillas.

Today that's not the case. Oh, sure, you can count on finding your standard offerings of enchiladas, burritos and tamales at any Mexican restaurant you drop into anywhere in the country. I've had an enchilada in Alaska that was indistinguishable from one I might get in Texas, Florida or North Carolina.

But lately I've noticed some unusual dishes creeping onto the menus of my local Mexican restaurants: Chicken baked in banana leaves, a specialty from the Yucatan peninsula. Hearty beef stews containing nary a single bean (although they do often come with strips of tortilla floating in them). Even cactus, cooked or chopped for salads.

I think what is happening is three things. One, Americans are becoming more cosmopolitan in their food tastes and are more willing now to try new and exotic dishes. Two, the explosion in the sheer number of restaurants means that these businesses must constantly tempt us with new food experiences in order to keep our business. Three, the influx of people from Mexico into many areas of the U.S. means that restaurants have a ready-made clientele for more traditional dishes that heretofore were absent from menus geared strictly to American tastes.

As a Mexican food aficiando, I welcome this trend. It means more new dishes to sample as well as to try to duplicate at home. Yum!

Don?t bother mentally processing the infinite pairings possible with food and wine, in any consideration of the world?s best. I must also leave out my personal childhood favorite of Tom?s Peanut Butter Crackers and Coca Cola (a treat I still indulge on road trips). There is no doubt that a well made Sazerac cocktail with freshly opened oysters stands astride the epicurean world like The Colossus of Rhodes as the best possible combination of food and drink.

A complete history of the Sazerac Cocktail written by Chuck Taggart is worth the read. I have confirmed the history from several other sources: the sum of which research leads me to the conclusion that the Sazerac is the oldest cocktail in America. In the early1800?s Antoine Amadie Peychaud, a New Orleans apothecary, made a drink using his medicinal Peychaud Bitters in a cognac and Absinthe drink called a ?coquertier.? This French word was Americanized to ?Cocktail.?

Mr. Taylor, owner of the Sazerac Coffeehouse, bestowed the name ?Sazerac? in 1853 by announcing the drink to hence forth be made solely from the Cognac brand, Sazerac-du-Forge et Fills. The Sazerac Coffeehouse changed owners in 1870 and with it, the basic Sazerac ingredient, Cognac, to American Rye Whiskey ? for reasons of availability and cost.

My personal introduction to the Sazerac was not as a libation, but in a story told to me by Marcelle Bienvenue, author of the cookbook Who?s Your Mama, Are You Catholic & Can You Make a Roux,? wherein she once reluctantly shared her Sazerac and oysters with Tennessee Williams in New Orleans? Acme Oyster Bar. The story so filled me with wonder, that I launched solo into the New Orleans night determined to find the best Sazerac in the Cresant City.

This ?hands on? research project lasted well into the following morning. About all I can meaningfully report is that I survived ? with an unrequited appetite for Sazeracs and fresh oysters.

I need some disclaimers here as regards ?well made? Sazeracs. If you?re trying for the ?World?s Best,? wait until you have the right ingredients. Everyone knows the original Absinth made with wormwood, a substance then determined to be deleterious to your health, was banned in the USA. That concept now is being challenged, and you can scout the Internet and again find Absinth available. I have not tried this as a substitute for Pernod. The New Orleans liqueur, Herbsaint, is used almost exclusively in its hometown, but I still prefer Pernod. You could substitute Canadian Rye, Bourbon or Cognac for American Rye, but I wouldn?t. Last but not least, there is always Angostura Bitters for the Peychaud Bitters, but why?

The World?s Best Pairing of Food and Drink
Ingredients:
2 ? 3 ? ounce Old Fashion Cocktail Glasses
5 ? drops Pernod
1 ? Sugar cube (Ok, Ok ? you could substitute a teaspoon of sugar or bar syrup)
2 ? Drops Peychaud Bitters
1 ? to 2 ? Ounces of Old Overholt American Rye Whiskey (Come on! Go out and buy a bottle)
Finely crushed ice
1 ? Large lemon twist (Make sure it?s big enough to drip a little lemon oil)
12 ? Each ultra fresh Blue Point oysters
Preparation:
Sazerac:
Fill glass No. 1 with ice to cool
Place two drops of Peychaud Bitters on the sugar cube and drop into glass No.2
Add Old Overholt whiskey and mull the sugar cube until it is completely crushed
Add ice and stir or shake until the sugar is totally dissolved.
Remove the ice from glass No.1 and dry.
Add 5 drops of Pernod to Glass No 1, rolling it around until all surfaces are covered.
Fling the excess Pernod out with a snap of the wrist (It?s all in the wrist action)
Strain glass No. 2 into glass No.1
Twist lemon peel until oil drops, then ad as garnish.
Oysters
Open, cut loose from shell, and display on bed of ice.

Go to Heaven! The warmth of the Sazerac has layers of complexity including spice honey and anise with the aroma of lemon oil. A balance of sweetness and pungency that combines with the oysters in a manner that makes you yearn for solitude where you can moan with pleasure without someone saying, ?I want what she?s having.?

You CAN Have Your Cats and Your Furniture Too

No one wants to invest hundreds or even thousands of dollars in furnishings only to see them ripped to shreds by an overzealous pet, however beloved. To many people the obvious answer is to have their cats declawed, but it this really a reasonable alternative?

Its proponents depict it as a simple and painless operation, but it is neither simple or painless. Most people aren't aware that it's not just the claws that are removed. Declawing involves the amputation of the first joint of each toe, and as any amputee can tell you, the pain persists for months if not years. The only difference is your cat can't tell you it still hurts.

This doesn't mean you have to put up with shredded furniture and drapes, or snagged carpets. I have four cats of my own, none of then declawed, and my upholstery and curtains are intact and my rugs unsnagged. There are a number of steps you can take to minimize or eliminate the damage.

1. Give them what they want.

Scratching is not just a means of sharpening claws, it's a vital form of exercise that tones and strengthens the muscles. Even declawed cats go through the motions. It's instinctive. Birds gotta swim, fish gotta fly, cats gotta scratch. Whatever. So give them something suitable to scratch on, preferably not one of those pint-sized carpet-covered pet department abominations. That only confuses them.

If that's what you already have, at least pull off the carpeting and wrap it with good quality jute or sisal rope, half-inch in diameter, wound tightly and secured with glue. If you sew, you might try making a slip cover you can easily remove and replace as necessary. Burlap is good for this, but almost any fabric with a heavy weave or a textured surface will work. My own cats are partial to upholstery velvet and corduroy. Ideally the post should be at least two inches higher than the cat can reach.

Many cats prefer a horizontal surface to scratch on, and take well to a commercial scratching pad made from corrugated cardboard.

Whatever you decide to use, spray it lightly with catnip extract (not synthetic - they WILL know the difference) and place it near your cat's favorite scratching spot. Once he or she becomes accustomed to the new surface, gradually move it to a more convenient location. These materials tend to be messy, so choose a spot where you can easily sweep or vacuum around it.

2. Use your good judgement when choosing fabrics and rugs.

Pass up all those lovely but delicate satin and damask weaves or the aforementioned textured surfaces. These are cat magnets. Knits and other stretchy fabrics are an open invitation to snags. Leather and faux leathers are also major no-no's. Sheer panels at the windows? Forget it!

Look for strong fabrics with a tight weave such as sailcloth or canvas. Most denims hold up well, also. For curtains, go with something like percale or chintz. Most of the curtains at my house are made from bedsheets, and are not only attractive but virtually indestructible. For carpeting, a medium or low plush is preferable to a berber or a sculptured pile. Remember, minimum texture is the key.

As long as we're on the subject, think brown. That way when your cat upchucks on it, and it will, it won't be such a disaster. If your cat is still drawn to the furniture, a number of companies sell clear plastic corner protectors that self-adhere to most fabrics.

3. Trim the claws.

It's not as difficult as it might seem, especially if you start them as kittens. Use a specifically designed animal nail trimmer and start out slow. Begin by just handling the paws, and practice extending the claws without trying to trim. The cat will become accustomed to being handled and will be less likely to react violently to the actual trimming. After a few days of this, try trimming, just one or two nails at a time, and only take off the very tips. If you still find it troublesome, most professional groomers will do it for a minimal fee.

4. Claw caps.

These are soft plastic covers that are glued onto the claws and last for up to 4-6 weeks. I've never tried them myself, but many people report good results.

Cats and people have shared living quarters for thousand of years, and with a little forethought and cooperation we should be able to maintain a harmonious relationship between ourselves, our pets, and our furniture.

Old gold leaf antiques can be cleaned with water containing a few drops of ammonia. New gold leaf can be bought in plain sheets, or in transfers that have a tissue backing. The transfer sheets are much easier to use than the plain sheets. When applying gold leaf to a restored area, make sure that the surface is clean and dry. Paint the base with Japan gold size and leave it to get ‘tacky’. Lay the sheets in place, slightly overlapping at the edges; rub them down carefully, following the direction of the overlap, with a clean cotton cloth until the edges blend evenly together. The knack is to lay the sheets on the surface when the size has reached the correct degree of ‘tackiness’. If the size is too wet, the leaf crinkles; if it is too dry, the leaf will not stick.

Sedona Airport Restaurant

I'm from New York City. I've been to diners where the staff treats you like they couldn't care less. In NYC, that's called "charm."

So when my wife and I came to Sedona we were looking for a little "charm." We found it at the Sedona Airport Restaurant. Frankly, we would never have known it existed if my cousin and her husband, a pilot, hadn't decided to fly in for the weekend in their little Cessna.

They suggested we have breakfast at the Sedona Airport Restaurant and see them off on their flight back to Maryland. I'm glad we did.

As many Sedona locals know, the Sedona Airport sits perched on an aircraft carrier shaped mesa high above Sedona on Airport Road off of Hwy 89A. They say that the Sedona Airport is "America's Most Scenic Airport," and it's hard to disagree. What's even nicer about it, it's small and only supports general aviation, corporate, and military aircraft, not commercial aircraft...for now.

If you walk to the terminal and go outside, you may be lucky enough to see the Red Baron biplane taking off. At a minimum, you'll see a bunch of cool looking light aircraft parked out on the tarmac. You might even decide to take an airplane ride before your meal.

But, back to the restaurant. Okay, it's a bit of a dive. The windows on the outdoor patio area are lined with plastic, and the staff doesn't always get the order right. The Sedona Oak Creek Airport Authority is currently seeking proposals for the construction and build out of an additional terminal facility for a new restaurant and lounge.

In the meantime Bob and Debbie Calia, whose family has operated the restaurant since 1980, have signed a new lease through August 2009 and have agreed to limited remodeling such as new carpet and paint.

The food is regular diner fare, but the "charm" is in the presentation. For breakfast you can have the Pilot's Choice of corned beef hash, eggs benedict, or "Stealth Bomber Skillets." For lunch how about a "Throttle Bendin' Burger," or a nice NY strip steak for dinner? It's the kind of hardy food you expect from a down-to-earth diner. Because my cousin and her husband were flying out early, a cup of "Liquid Fuel" at breakfast hit the spot.

For a hardy meal, scenic views, and airplane watching, you can't beat the Sedona Airport Restaurant.

Average breakfast/lunch costs between $10-$15 per person, and dinner about $15-$25 per person.
